The Nottingham strain is preferred for its highly flocculant & relatively full attenuation properties.
It has been described as neutral for ale yeast, allowing the full natural flavor of malt & hops to develop.and it produces low concentrations of fruity and estery aromas.
The recommended fermentation temperature range of this strain is between 14° to 21°C (57° to 70°F).
It has an excellent tolerance to low fermentation temperatures (12°C/54°F) which allow this strain to be used for brewing lager-style ale.
With a relatively high alcohol tolerance, Nottingham is an excellent choice for brewing higher-alcohol specialty beers!
