Alcotec Aromatic Wine Yeast Complex is fundamentally somewhere between a wine yeast and a turbo yeast.
It is produced on a wine yeast strain, which was chosen for its ability to produce a fruity and clean wine.
High Alcohol Aromatic Premium Wine Yeast has the addition of a turbo style nutrition which makes it ferment quicker without losing the retained qualities from the fruit or grapes.
Most fruit contains an amount of pectin, and this can cause a problem as the wine may develop a haze because of this.
To solve this problem, an ammount of a pectic enzyme which breaks down the unwanted components has been added.
Most enzymes used for this purpose has none, or very little activity at "normal" temperatures and require a high temperature to make it work.
This enzyme is a very high activity type which can work at 30C.
30°C temperature is the optimum temperature.
If you go much above this temperature it will kill the yeast.
If you go much below, the enzymatic activity will be lower.
Be careful to aim for 30°C start liquid temperature when using the Aromatic Wine Yeast Complex.
