A demijohn is a glass bottle container with a narrow neck and a bulbous body, typically used for storing and fermenting liquids such as wine or beer. 

The word "demijohn" comes from the French word "dame-Jeanne," which means "Lady Jane." Demijohns can vary in size, ranging from a few litres to several gallons, and they are often used in home brewing or winemaking and for decorative purposes.

A demijohn is a large glass container for brewing and fermenting beer, wine, and other alcoholic beverages. If you want to make your homebrew using a demijohn bottle, you can follow these steps:

  1. Obtain a large glass bottle: You can buy a 1 gallon demijohn from Brew Mart supply store or repurpose a large glass container such as a carboy or a wine bottle. Please make sure the container is clean and sanitised before using it.
  2. Get a stopper and an airlock: You will need a rubber stopper that fits snugly into the top of the demijohn and an airlock that allows carbon dioxide to escape during fermentation without allowing air to enter.
  3. Prepare your ingredients: Depending on what you are brewing, you must prepare your ingredients in advance. 
  4. Follow a recipe or home brew kit instructions carefully to ensure you get the desired results.
  5. Combine the ingredients in the demijohn: Pour your ingredients into the demijohn, leaving some space at the top for fermentation. 
  6. Ensure to leave enough headspace, so the foam from the fermentation does not overflow.
  7. Insert the stopper and airlock: Insert the rubber stopper into the top of the demijohn and then insert the airlock into the hole in the stopper. Make sure that the airlock is filled with water to create a seal.
  8. Store the demijohn in a cool, dark place: Place the demijohn in a location that is out of direct sunlight and has a consistent temperature. You may want to cover the demijohn with a blanket or towel to protect it from light.
  9. Wait for fermentation to complete: The time it takes to complete will depend on the recipe and the conditions. Check the demijohn regularly to ensure the airlock is functioning, and the fermentation is proceeding as expected.
  10. Bottle or keg your homebrew: Once fermentation is complete, you can bottle or keg your homebrew and enjoy the fruits of your labour!

Although glass is a heavy and delicate substance, it has proven its use as a long-term storage container for wines, beer & spirits.

Glass demijohns can easily be made airtight, are easily sterilised and do not hold odours.

The ideal secondary distillation vessel for beer and wine brewed at home.

They can be preferred to plastic demijohns carboys and plastic buckets as they do not scratch so quickly and do not disintegrate over time.

If handled carefully, a glass demijohn will last decades while giving the same excellent performance for each brew.
