BRY-97 American West Coast Yeast was chosen from the Siebel Institute Culture Collection and is approved by a number of commercial breweries to brew different styles of beer.
It is a classic American beer yeast that offers the advantage and long shelf life of dried yeast together with excellent performance and high quality standards.
Clean, quick, and well-attenuating are the main properties of this yeast.
It is most commensurable to the "Chico"-type strains.
This strain stays clean at relatively high temperatures (up to 78F), and flocculation is slightly better than alternative "Chico" strains.
Due to the marginally higher flocculation tendencies, it does slightly reduce bittering levels in the finished ale.
