Amylase 25g

Alpha Amylase is a starch remover.

Amylase is an enzyme that breaks down starch into sugars (these sugars can also produce alcohol) thereby preventing the hazes.

Starch is a fundamental ingredient of many of the fruits and vegetables used in country wines, and this can cause a haze in the finished wine that cannot be removed by finings. 

You can if needed add this Amylase to the wine after it has finished fermenting.
The suggested dosage of Amylase is one teaspoon per gallon.
