Wheat Malt is used to produce specialist beers such as the famous Weissbiers from southern Germany and similar top-fermenting beers.
It is also excellent when used for brewing lagers and is beneficial when blended with other malts for brewing ales and bitters.
This malt has outstanding head retention attributes, and the flavour it imparts is dry and biscuity.
For ales and bitters, up to 10% of the total malt content as usual however in lager or other top-fermenting beers up to a
1/3 or more of the entire malt content can be wheat malt
Wheat malt has a colour of between 3.5 and 4.5 EBCs
