The winemaking was a combination of whole-bunch-pressed and destemmed-to-press grapes that had been havested by hand. 85% of the wine underwent stainless steel cold fermentation to hold onto that freshness, with 15% matured in French oak for that lush mouth feel. The barrels had their lees stirred for six months.
